  1. 1Preheat the oven to 200°C. Rinse the sole fillets and pat dry thoroughly (good drying gives a nicely browned surface).
  2. 2In a small bowl, mix the olive oil with the thyme, garlic paste, salt, and pepper.
  3. 3Lay the fillets in a baking dish lightly oiled with olive oil. Brush each fillet generously with the oil-thyme mixture on both sides.
  4. 4Bake for only 10-12 minutes — sole is very delicate and cooks fast. Test with a fork: if the flesh flakes easily, it's done.
  5. 5Serve immediately with the pan juices spooned over. Pairs with white rice or bran bread on the side.

Tips

💡Don't bake longer than 12 minutes — sole dries fast. For thick fillets, add only 2 more minutes.
💡Quality dried thyme has a strong smell and a deep green color — avoid pale thyme; it's old and weak.
