  1. 1Soak the dried apricots in warm water for 15 minutes until they soften enough to stuff without breaking.
  2. 2Meanwhile, toast the almonds in a dry pan over low heat for 3-4 minutes until fragrant and lightly golden. Let cool.
  3. 3Drain the apricots and pat dry. Open each one from the side and tuck a whole almond inside. Press gently to close.
  4. 4Arrange on a serving plate. A light dusting of cinnamon (optional) before serving is nice.

Tips

💡Buy unsulfured dried apricots (sulfur preserves the bright orange but it's a chemical additive). Unsulfured apricots are darker brown and have deeper flavor.
💡Store in a sealed container in the fridge for up to a week — the flavors develop and meld. The longer it sits, the deeper the taste.
