Grilled Mackerel with Cumin

  1. 1Clean the mackerel of scales and entrails (or have your fishmonger do it). Make two diagonal cuts on each side — they help the seasoning penetrate and the fish cook evenly. Pat dry with a towel.
  2. 2In a small bowl, mix the olive oil with cumin, coriander, salt, and pepper. Brush the fish all over and into the cuts. Let marinate for 15 minutes.
  3. 3Heat a grill or grill pan over high heat. Place the fish on it and leave undisturbed for 4-5 minutes until it releases naturally from the surface, then flip and grill the other side for 3-4 more minutes.
  4. 4Test doneness: gently press the flesh with a fork — if it flakes easily and looks opaque white, it's done. Serve immediately.

Tips

💡Mackerel is naturally rich and oily — it doesn't need sauce. Cumin and coriander are enough to bring out its depth.
💡Don't flip the fish before 4 minutes — if you try too early, the skin sticks to the grill and tears.
