Turkish Coffee with Cardamom

- 1In a copper kanaka (or small pot), pour the water and set over low heat.
- 2Before the water boils, add the coffee and cardamom and stir once gently until the coffee dissolves on the surface.
- 3Leave undisturbed over low heat. The foam will start to rise — the moment it nearly overflows, lift the kanaka off the heat for 5 seconds, then return. Repeat twice — this thickens the foam.
- 4Pour carefully into small cups, distributing the foam evenly. Serve immediately with a glass of cold water on the side.
Tips
💡The foam (wesh) is the mark of good Turkish coffee — don't let it hit a hard boil, which destroys the foam and turns the taste bitter.
💡Sip from a small cup slowly, and leave the very last sip undisturbed so the grounds settle at the bottom — that's the traditional way.
